Ghee is a form of Clarified butter that originated in India. Many Yogis recommend the use of ghee as an anti-inflammatory and to help with digestion. Much like clarified butter, the milk solids have been removed and separated during the heating process. The significant difference between ghee and clarified butter is that with ghee, the milk solids are cooked longer with the butterfat, slightly browned, resulting in a nuttier flavor. It is a terrific option for high-heat cooking due to the absence of milk solids. Ghee is also a popular option for those who are lactose intolerant and those choosing to follow a Paleo diet. It is also shelf-stable, no need to refrigerate, providing you keep it free from water or steam.

The uses of ghee are endless. You can switch it out for olive oil or butter, saute with it, use for toast or add it to oatmeal. In summer, I keep plenty of ghee in my pantry for dipping steamed lobster meat. Year-round, it is excellent for frying or sauteing poultry, seafood, vegetables or my favorite, grilled cheese sandwiches!
