                             What is it and How Does it Taste?

                   Crème Fraiche/ France’s version of Sour Cream?

 

Crème Fraiche is a thick cream made from heavy cream that originated in France.

It is a version of sour cream with higher fat content and is thicker than sour cream as well as less tangy. It is also better for cooking as it does not curdle like sour cream when heated. It's great for soups and sauces. It is richer, thicker and creamier than sour cream. Listed below are some of my favorite ways to use Crème Fraiche.

Inspirations:

a.       Crème Fraiche is always a welcome accoutrement to top some of my favorite soups. Tomato, Butternut squash, Carrot, Mushroom and more. Try mixing in some herbs, before dolloping a tablespoon on top of the soup. Ginger pairs nicely, when mixed with Crème Fraiche to top carrot soup.

b.       Chop fresh herbs, mix in, and use in place of sour cream on a baked potato.

c.       Fresh figs; smear on halved figs and top with a caramelized walnut for an appetizer.

d.       Dips

e.       Caviar and crème Fraiche

f.        Tossed with pasta or potatoes and seasoned

g.       Added to sauces for chicken, beef as well as vegetables.
